Recipe - Paul Hanson's Carrot Cake~

the author's great-uncle)
Sift
together:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
In
another bowl combine:
1 1/2 cups salad oil
2 cups sugar
Directions:
Mix well, add 4 beaten eggs, one at a time, and beat
well after each egg. Gradually add 2 cups finely grated carrots. Add dry
ingredients. Mix well.
Bake 50 to 60 minutes at 350° (Less time for cupcakes)
Icing:
1/2 cup butter or margarine
1 (8oz.) pkg. cream cheese
Beat until light and fluffy. Gradually add while
beating:
3 3/4 cup powdered sugar
1 tsp vanilla
(1 cup chopped pecans - optional)

ReplyDeleteAnd why would Preston Pennyworth be willing to pay so much for Creative Cupcakes? Makes me wonder if he's not behind all the rest of the troubles for the girls.
ReplyDeleteNo matter how much we do 'glamorize' the Christmas season, it really is a stressful time. But if, like Andi, we can find what really matters, then we can face all the rest.
BTW -- I'm going to have to try the Paul Hanson's Carrot Cake recipe.
